Menu de Pâques : de l’apéro au dessert, un festin printanier et astuces de présentation

Pourquoi ce menu va faire chanter votre printemps 🌷

Le printemps pointe le bout de son nez ! Les journées rallongent, les jonquilles tapissent le jardin et une douce lumière dorée traverse les vitres. Pour célébrer ce renouveau, je vous propose un menu de Pâques cosy qui marie cuisine gourmande et décoration Cottage Farmhouse. Servez-le lors d’un déjeuner familial : succès garanti auprès des convives.

L’apéro bucolique : cinq bouchées à picorer

Toasts chèvre & confit d’oignon

Etalez du chèvre frais sur une tranche de pain de campagne ou pain aux céréales, et ajouter une noix de confit d’oignon par dessus. Succès garantit pour ce toast simple et gourmand.

Astuce présentation : Alignez-les sur une planche en bois et parsemez de thym frais

 

Fleurs de pesto (feuilletés)

Découpez soigneusement une pâte feuilletée à l’aide d’un emporte pièce en forme de fleur. Ajoutez du pesto au centre, et refermez délicatement les bords du chausson. Un peu de jaune d’oeuf pour donner un aspect doré et enfournez à 180° pendant 15 à 20 min à chaleur tournante.

Astuce présentation : placez les fleurs de pesto sur un nid de salade pour un aspect « Fleurs du Jardin »

Croissants au jambon de Pâques

Découpez une pâte feuilletée ronde en 8 parts. Placez une tranche de jambon sur chacune des parts. Ajouter le fromage de votre choix (boursin, emmental râpé, etc). Un peu de jaune d’oeuf pour donnée un aspect doré et enfournez à 180° pendant 15 à 20min à chaleur tournante.

Astuce présentation : Servez les croissants jambon sous une cloche en verre pour l’effet boulangerie rustique. La cloche faisant un rappel subtil également aux cloches de pâques.

Brochettes tomates-mozza

Rien de plus simple : piquez une tomate cerise puis un bout de mozzarella sur un pic à brochette.

Astuce présentation : Plantez vos piques dans un pot en émail rempli de gros sel ; succès visuel assuré !

Brochettes raisin-emmental

Rien de plus simple : piquez un bout d’emmental puis un raisin, puis à nouveau un bout d’emmental sur un pic à brochette. Le raisin apporte énormément de fraicheur.

Astuce présentation : Pour un support bucolique, piquez-les dans un demi-pamplemousse

Entrée : œufs cocotte aux asperges vertes

Voici l’entrée que j’avais prévue de faire, mais qui est tombée à l’eau quand la vitre de mon four s’est brisée en 1000 morceaux. Le rendez-vous est pris pour refaire cette entrée l’année prochaine.

Astuce présentation : Nouez un ruban de raphia autour du ramequin (ou la mini cocotte) et parsemez de ciboulette.

Plat principal : risotto aux girolles & mesclun aux pignons

Risotto crémeux garni de girolles poêlées, accompagné de son Mesclun printanier agrémenté de pignons grillés et copeaux de parmesan. Dites moi en commentaire si vous souhaitez que je partage ma recette de risotto aux champignons. 😉

Astuce présentation : Servez le risotto dans un cerclage afin qu’il ai une jolie forme régulière. Quelques girolles poêlées sur le côté garnies d’un peu de persil frais. Et une jolie feuille de basilic sur le risotto. Le mesclun peut-être mis dans un joli ramequin à côté.

Bouquet sucré : Charlotte au chocolat & Sablés fleurs

Charlotte au chocolat

Ma tradition de Pâques est de faire une Charlotte au chocolat. Cette année, je l’ai faite le matin même du déjeuner de Pâques. La préparation était exceptionnelle avec une chantilly maison et des oeufs montés en neige à la parfaite consistance, mais je ne l’ai pas laissée reposée assez longtemps au frigo. Elle s’est donc effondrée au moment de servir. Je vous conseille donc d’anticiper et de préparer votre charlotte la veille afin d’éviter un effondrement.

Quoi qu’il en soit, elle était très bonne. J’utilise toujours cette recette pour la faire. Elle a toujours beaucoup de succès.

Astuce présentation : Déposez la charlotte sur un joli plateau en bois à pied, entourez d’un ruban à motif Liberty et saupoudrez d’un voile de vermicelles au chocolat pour donner un aspect « nid ». Enfin, déposez une poule en chocolat.

Sablés fleurs

Je vous ai déjà donné la recette de mes sablés maison içi. La seule différence réside dans le découpage des biscuits. Pour Pâques, je fais simple. J’utilise des emporte-pièces en forme de lapin, d’agneau ou de fleur. Cette année, c’était des sablés en forme de fleurs.

Astuce présentation : Découpez vos biscuits en forme de marguerites et ajoutez un joli glaçage pour créer le bouton et le contour des pétales. Déposez ensuite les biscuits dans des sachets individuels (en papier) si c’est pour offrir. Ou bien dans un joli plat en porcelaine si c’est pour votre table de desserts de Pâques.

Du premier feuilleté en forme de fleur à la dernière miette sablée, ce menu de Pâques cosy incarne l’élégance rustique d’une maison de campagne : généreux, coloré, résolument printanier. Allumez vos bougies à la fleur de coton, passez un vinyle de jazz doux, et laissez la magie opérer.
